The trees of your orchards are specially selected for the quality of their fruits and their productivity. The 3000 hectares of Zouitina estates benefit from the GLOBAL GAP, BRC labels. We have many varieties of high quality olives such as Beldi, Arbequine, Picual and Picholine.
We harvest our olives by hand one by one, preciously, with the greatest respect. The delicate handling, associated with the harvest of the green olives bring the organoleptic character, high level of antioxidants and all its particularity to the final product.
We take our olives within the time of their harvest to the processing site. Our extraction site located on our estates, allows us to reduce the time elapsed from the olive harvest until the oil is obtained to less than six hours.
Once our olive oil is extracted and filtered. Zouitina is then stored in our stainless steel tanks at a controlled temperature to preserve its intact quality during its transportation and setting in stands, where it will be directly served.

The Zoutina Prestige extra virgin olive oil is produced and tested for every batch of productions in ensuring its highest quality. The analyses were determined using accredited methods as suggested by the International Olive Council (IOC) and recognised by the European Legislation [Commission Regulation (EC) No. 1019/2002 & (EC) No. 702/2007].
The quality was measured both in terms of sensory test and chemical analyses. The sensory test was executed through the Organoleptic Test [RCEE 2568/91] which classifies the Prestige as Extra Virgin Olive Oil in terms of aroma. In terms of chemical analyses, the free acidity, peroxide index and spectrophotometric values of the Prestige also fall within extra virgin olive oil grade.
The free acidity (%) value of the Prestige extra virgin olive oil is the lowest in the market. While IOC and EU classify ≤0.8% as extra virgin olive oil, our Prestige exhibit a much lower value; less than 0.2%.
